French Toast

Caramelized Bananas

Vanilla Mousseline

Method

French Toast

  1. 1

    Prepare the Egg Mixture

In a large mixing bowl, whisk together the eggs, milk, vanilla extract, and ground cinnamon until well combined and smooth.

  2. 2

    Dip the Bread

Preheat a skillet over medium heat and melt the butter. Dip each slice of bread into the egg mixture, allowing it to soak for a few seconds on each side.

  3. 3

    Cook the French Toast

Place the soaked bread slices in the skillet and cook for 3-4 minutes on each side, or until golden brown and cooked through. Set aside on a warm plate.

Caramelized Bananas

  1. 4

    Prepare the Bananas

Peel the bananas and slice them diagonally into half-inch thick pieces.

  2. 5

    Caramelize the Bananas

In a large skillet, melt the unsalted butter over medium heat. Add the brown sugar and stir until dissolved. Add the sliced bananas and orange zest, cooking for about 2-3 minutes until the bananas are tender and caramelized. Pour in the rum and carefully flambé, if desired, then remove from heat.

Vanilla Mousseline

  1. 6

    Whip the Cream

In a mixing bowl, combine the heavy cream, vanilla bean paste, and powdered sugar. Using an electric mixer, whip until soft peaks form.

Assembly

  1. 7

    Plate the Dish

On a serving plate, stack two slices of French toast. Top with a generous serving of the caramelized bananas, followed by a dollop of vanilla mousseline.

  2. 8

    Serve

Serve immediately while warm, enjoying the delightful combination of flavors.
