Method

Preparation

  1. 1

    Combine Alcohols

In a large glass jar, combine 500 ml of grappa and 100 ml of aged brandy. Stir gently to mix.

  2. 2

    Add Herbs and Spices

Add 1 tsp of wormwood, 1 tsp of gentian root, 1 cinnamon stick, 5 whole cloves, 1 whole star anise, 1 strip of orange peel, and 2 whole cardamom pods to the jar. Stir to combine.

Infusion

  1. 3

    Infuse the Mixture

Seal the jar tightly and let the mixture infuse in a cool, dark place for at least 2 weeks. Shake the jar gently every few days to help the flavors meld.

Sweetening

  1. 4

    Prepare Sweetening Agents

After 2 weeks, prepare the sweetening agents by combining 100 ml of honey and 50 g of brown sugar in a small saucepan over low heat. Stir until the sugar is dissolved and the mixture is well combined.

Final Mixing

  1. 5

    Combine Everything

Once the sweetening mixture has cooled, strain the infused alcohol mixture through a fine mesh strainer into a clean bottle. Add the sweetening mixture gradually, tasting as you go, until you reach your desired sweetness.

  2. 6

    Add Final Flavorings

Add 1 tsp of vanilla extract and 20 ml of lemon juice to the final mixture. Stir well to combine.

Storage

  1. 7

    Bottle and Store

Transfer the Amaro Nonino to a clean, sterilized bottle. Seal tightly and store in a cool, dark place. Allow it to rest for at least another week before serving for the best flavor.
