Method

Beef Tenderloin

    Prepare the Beef

    Season the prime beef tenderloin with salt and black pepper on all sides.

    Sear the Beef

    Heat olive oil in a skillet over medium-high heat. Once hot, add the beef tenderloin and sear for 3-4 minutes on each side for medium-rare. Adjust time as necessary for desired doneness.

    Rest the Beef

    Remove the beef from the skillet and let it rest for 5 minutes before slicing.

Potato Purée

    Prepare the Potatoes

    Peel and cube the Yukon Gold potatoes into even pieces.

    Boil the Potatoes

    Place the potatoes in a large pot of salted water. Bring to a boil and cook until fork-tender, about 15-20 minutes.

    Make the Purée

    Drain the potatoes and return them to the pot. Add heavy cream, unsalted butter, salt, and black pepper. Mash until smooth and creamy.

Charred Broccolini

    Prepare the Broccolini

    Trim the ends of the broccolini and rinse under cold water.

    Char the Broccolini

    Toss the broccolini with olive oil, salt, and black pepper. Heat a grill or a grill pan over medium-high heat and cook the broccolini for 4-5 minutes, turning occasionally, until charred and tender.

Herb Gremolata

    Prepare the Gremolata

    Finely chop the fresh parsley and garlic. Combine in a bowl with lemon zest. Mix well.
