1. Prepare the Grits
In a saucepan, bring 4 cups of water to a boil. Add the grits and a pinch of salt. Reduce heat to low and simmer, stirring occasionally, for about 20 minutes or until thickened.
2. Cook the Collard Greens
In a separate pan, heat 1 tablespoon of olive oil over medium heat. Add chopped collard greens and sauté for about 5 minutes. Add salt and pepper to taste and continue cooking until tender, about 10 more minutes.
3. Prepare the Shrimp Broth
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Add the corn kernels and shrimp, cooking until shrimp is pink and cooked through, about 5 minutes. Pour in chicken broth and bring to a simmer. Stir in chopped basil and season with salt and pepper.
4. Sear the Scallops
In a skillet, heat remaining butter and olive oil over high heat. Season scallops with salt and pepper. Once the skillet is hot, add the scallops and sear for about 2-3 minutes on each side until golden brown and cooked through.
5. Plate the Dish
On each plate, spoon a generous portion of creamy grits, top with sautéed collard greens, place the seared scallops on top, and drizzle with the roasted corn basil shrimp broth.
