Preparation Directions
- 1
Prepare the Potatoes
Preheat your oven to 425°F (220°C). Wash and peel the Russet potatoes. Cut them into thin fries, about 1/4 inch thick.
- 2
Season the Fries
In a large bowl, toss the cut fries with olive oil, salt, and black pepper until evenly coated.
- 3
Bake the Fries
Spread the seasoned fries in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes, turning halfway through, until golden and crispy.
- 4
Add Truffle Oil and Parmesan
Once the fries are done baking, remove them from the oven and drizzle the truffle oil over the hot fries. Toss with grated Parmesan cheese until well mixed.
- 5
Serve with Arugula
Top the fries with fresh arugula and serve immediately while hot.
