Preparation and Cooking

    Prepare the Fries

    Cook the French fries according to package instructions until crispy. Once cooked, toss them in a bowl with truffle oil, arugula, and grated pecorino cheese. Season with salt and pepper to taste.

    Cook the Steak

    Season the sirloin steak with salt and pepper. Heat a skillet over medium-high heat and add a little oil. Cook the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness is achieved. Let it rest for a few minutes before slicing.

    Prepare the Peppercorn Demi

    In the same skillet used for the steak, add a splash of water or beef stock, scraping up the browned bits from the bottom of the pan. Add crushed peppercorns and reduce until slightly thickened. Season with salt to taste.

    Serve

    Plate the sliced steak and drizzle with the peppercorn demi. Serve alongside the truffle arugula pecorino fries.
