    Prepare the Oysters

    Preheat your broiler to high. Carefully shuck the oysters and place them on a baking sheet.

    Cook the Bacon

    In a skillet, cook the bacon over medium heat until crispy. Remove and drain on paper towels. Once cooled, crumble the bacon.

    Sauté Spinach and Garlic

    In the same skillet, add olive oil and minced garlic, sauté for about 1 minute. Add the spinach and cook until wilted.

    Combine Toppings

    In a bowl, combine the sautéed spinach, crumbled bacon, chopped sun-dried tomatoes, and grated Pecorino cheese. Mix well and season with black pepper.

    Top the Oysters

    Spoon the topping mixture generously over each oyster.

    Broil the Oysters

    Place the baking sheet under the broiler and broil for about 5-7 minutes, or until the topping is golden and bubbly.
