    In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until translucent.

    Cook the Beans and Rice

    Add black-eyed peas, vegetable broth, bay leaves, salt, and black pepper. Bring to a boil, then reduce heat, cover, and simmer for 20 minutes.

    Stir in the long-grain rice, cover, and let it cook for an additional 15-20 minutes or until the rice and peas are tender.

    Prepare the Fish

    In a separate pan, heat a bit of olive oil over medium-high heat. Season the fish fillets with salt and pepper, then cook for 3-4 minutes on each side, or until cooked through.
