Deviled Eggs

    Prepare the Eggs

    Place the eggs in a pot and cover with cold water. Bring to a boil, then remove from heat and cover for 12 minutes. Transfer eggs to an ice bath to cool.

    Make the Filling

    Once cooled, peel the eggs and cut them in half lengthwise. Remove yolks and place them in a bowl. Mash yolks with mayonnaise, Dijon mustard, tasso ham, salt, pepper, and paprika until smooth.

    Fill the Egg Whites

    Spoon or pipe the yolk mixture back into the egg white halves. Sprinkle with chopped chives for garnish.

Fried Oysters

    Prepare the Breading

    In a shallow dish, combine flour, cornmeal, salt, black pepper, and cayenne pepper.

    Coat the Oysters

    Dip each oyster in the beaten egg, then dredge in the flour mixture until evenly coated.

    Fry the Oysters

    In a deep skillet, heat vegetable oil over medium-high heat. Fry oysters in batches until golden brown, about 2-3 minutes per side. Drain on paper towels.

Sriracha Aioli

    Mix the Aioli

    In a small bowl, combine mayonnaise, sriracha sauce, lemon juice, and minced garlic. Stir until well combined.
