Preparation
Preheat the oven to 450°F (232°C).
Season the Roast
In a small bowl, combine the kosher salt, black pepper, garlic powder, onion powder, and chopped fresh rosemary. Rub the mixture all over the prime rib roast. Drizzle with olive oil and ensure the seasoning is evenly distributed.
Roasting
Place the seasoned prime rib on a roasting pan, bone side down. Roast in the preheated oven for 20 minutes at 450°F (232°C) to create a crust.
Reduce Temperature
After 20 minutes, reduce the oven temperature to 325°F (163°C) and continue roasting until the internal temperature reaches your desired doneness (about 130°F for medium-rare). This will take approximately 1.5 to 2 hours, depending on the size.
Resting
Remove the roast from the oven and let it rest for at least 20-30 minutes before carving. This allows the juices to redistribute.
Serving
Carve the prime rib into thick slices and serve with au jus, horseradish cream sauce, mashed potatoes, mixed vegetables, and a garden salad.
