Make the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and crack in the eggs. Add the olive oil.

Mix the Filling
In a bowl, combine the sautéed mushrooms, ricotta cheese, chopped rosemary, salt, and black pepper. Mix until well combined.
Ravioli Assembly

Roll Out the Dough
Divide the rested dough into four pieces. Roll out one piece at a time into thin sheets using a pasta machine or rolling pin. Keep the remaining dough covered to prevent it from drying out.

Form the Ravioli
Place small mounds of the filling about 1 inch apart on one sheet of dough. Brush around the filling with water. Carefully lay another sheet of dough over the top and press down to seal around each mound. Cut out ravioli with a knife or pasta cutter.

Cook the Ravioli
Bring a large pot of salted water to a boil. Add the ravioli and cook for 3-4 minutes or until they float to the surface. Remove with a slotted spoon and set aside.

Prepare the Alfredo Sauce
In a saucepan, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute. Pour in the heavy cream and bring to a simmer. Stir in the grated Parmesan cheese, salt, and black pepper, cooking until the sauce thickens slightly.

Combine and Serve
Toss the cooked ravioli gently in the Alfredo sauce until coated. Serve hot, garnished with additional grated Parmesan and fresh rosemary if desired.
