Prepare the Pork

Trim any excess fat from the pork shoulder and cut it into large chunks for easier cooking.

Marinate the Pork

In a large bowl, combine the orange juice, lime juice, minced garlic, dried oregano, cumin, salt, and black pepper. Add the pork chunks and ensure they are well coated in the marinade. Cover and refrigerate for at least 2 hours, or overnight for best results.

Preheat your oven to 300°F (150°C). Place the marinated pork in a Dutch oven or a heavy oven-safe pot, add the bay leaf, and cover. Cook in the oven for approximately 3-4 hours, or until the pork is tender and easily shredded with a fork.
