Method
Marinade Preparation
Combine Marinade Ingredients
In a bowl, whisk together olive oil, lime juice, minced garlic, ground cumin, chili powder, salt, and black pepper until well combined.
Marinate Chicken
Place the chicken breasts in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).
Grilling
Preheat Grill
Preheat your grill to medium-high heat (about 400°F or 200°C).
Grill Chicken
Remove the chicken from the marinade and discard the remaining marinade. Place the chicken on the grill and cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
Rest Chicken
Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing.
Taco Assembly
Warm Tortillas
While the chicken is resting, warm the corn tortillas on the grill for about 1-2 minutes on each side until soft and pliable.
Assemble Tacos
Slice the grilled chicken into strips. To assemble the tacos, place a few pieces of chicken in the center of each warm tortilla. Top with shredded lettuce, diced tomatoes, a dollop of sour cream, shredded cheese, chopped cilantro, and sliced jalapeños as desired.
Serve
Serve the tacos immediately with lime wedges on the side for extra flavor.
