Preparation

  1. 1

    Cook Manicotti

Bring a large pot of salted water to a boil. Cook the manicotti for about 7-8 minutes until slightly softened. Drain and set aside to cool.

  2. 2

    Prepare Cheese Filling

In a large bowl, combine the ricotta cheese, mozzarella cheese (reserve 1 cup for topping), parmesan cheese, egg, fresh parsley, salt, and pepper. Mix well until fully combined.

  3. 3

    Fill Manicotti

Using a spoon or piping bag, carefully fill each manicotti tube with the cheese mixture. Place the filled manicotti in a baking dish.

Assembly

  1. 4

    Add Sauce

Pour the marinara sauce evenly over the filled manicotti in the baking dish, ensuring each piece is covered.

  2. 5

    Add Toppings

Sprinkle the reserved mozzarella cheese and parmesan cheese evenly over the top of the sauce-covered manicotti.

Baking

  1. 6

    Bake

Preheat the oven to 375°F (190°C). Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.

  2. 7

    Serve

Remove from the oven and let it cool for a few minutes before serving. Garnish with additional parsley if desired.
