Method

Main Course

  1. 1

    Prepare the Brisket

Rinse the corned beef brisket under cold water to remove excess brine. Place it in a large pot.

  2. 2

    Add Water and Spices

Pour 8 cups of water over the brisket in the pot. Add 2 tablespoons of pickling spice and 2 bay leaves.

  3. 3

    Simmer

Bring the pot to a boil, then reduce the heat to low. Cover and simmer for about 2.5 to 3 hours or until the meat is tender.

  4. 4

    Add Vegetables

30 minutes before the brisket is done, add the peeled and chopped carrots, potatoes, and cabbage to the pot.

  5. 5

    Serve

Remove the brisket and vegetables from the pot. Slice the brisket against the grain and serve with the vegetables.

Side Dish

  1. 6

    Preheat the Oven

Preheat your oven to 425°F (220°C).

  2. 7

    Mix Dry Ingredients

In a large bowl, combine 4 cups of flour, 1 teaspoon of baking soda, and 1 teaspoon of salt.

  3. 8

    Add Wet Ingredients

Make a well in the center of the dry ingredients and pour in 1.5 cups of buttermilk and 1 beaten egg. Mix until just combined. If using, fold in 1 cup of raisins.

  4. 9

    Shape the Dough

Transfer the dough to a floured surface and knead gently. Shape into a round loaf.

  5. 10

    Bake

Place the dough on a baking sheet and cut a cross on the top. Bake for 30-35 minutes or until golden brown.

Dessert

  1. 11

    Blend the Shake

In a blender, combine 2 cups of vanilla ice cream, 1 cup of milk, 1 teaspoon of mint extract, and 5 drops of green food coloring.

  2. 12

    Serve

Blend until smooth and serve in chilled glasses. You can garnish with whipped cream if desired.
