    Bake the Potatoes

    Preheat your oven to 400°F (200°C). Scrub the russet potatoes clean and poke several holes in them with a fork. Rub the potatoes with olive oil, then sprinkle with salt and black pepper. Place the potatoes directly on the oven rack and bake for about 45-60 minutes, or until they are tender when pierced with a fork.

    Prepare the Fillings

    While the potatoes are baking, cook the bacon until crispy, then crumble it into small pieces. Chop the scallions and dice the tomato. Set all fillings aside for later use.

Assembling the Potato Skins

    Slice and Scoop

    Once the potatoes are baked and cool enough to handle, slice each potato in half lengthwise. Use a spoon to scoop out some of the potato flesh, leaving about 1/4 inch of potato in the skin for structure.

    Fill the Skins

    Brush the insides of the potato skins with olive oil and sprinkle with salt and pepper. Fill each potato skin with shredded cheddar cheese, crumbled bacon, and diced tomatoes.

    Bake Again

    Place the filled potato skins back in the oven on a baking sheet. Bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

Serving

    Garnish and Serve

    Remove the potato skins from the oven. Top each skin with a dollop of sour cream and a sprinkle of chopped scallions. Serve immediately and enjoy!
