Pork Osso Bucco

    Season the Pork

    Pat the pork shanks dry with paper towels. Season both sides with salt and black pepper.

    Sear the Meat

    In a large Dutch oven or heavy pot, heat olive oil over medium-high heat. Add the pork shanks and sear until browned on all sides, about 4-5 minutes per side. Remove the shanks and set aside.

    Sauté Vegetables

    In the same pot, add diced carrots, celery, and chopped onion. Sauté for about 5 minutes until softened. Add minced garlic and cook for another minute.

    Add Tomato Paste and Wine

    Stir in tomato paste and cook for 1 minute. Pour in white wine, scraping the bottom of the pot to deglaze, and bring to a simmer.

    Add Broth and Herbs

    Return the pork shanks to the pot. Pour in beef broth and add thyme and bay leaves. Bring to a boil, then reduce heat to low and cover. Simmer for about 1.5 to 2 hours until the meat is tender.

Mashed Potatoes

    Boil Potatoes

    In a large pot, add the cubed potatoes and cover with water. Bring to a boil and cook for about 15-20 minutes or until fork-tender. Drain and return to the pot.

    Mash Potatoes

    Add butter, milk, salt, and black pepper to the drained potatoes. Mash until smooth and creamy.

Mixed Vegetables

    Sauté Vegetables

    In a skillet, heat olive oil over medium heat. Add mixed vegetables and sauté for about 5-7 minutes until heated through and tender. Season with salt and black pepper to taste.
