Ravioli Dough Preparation

Make the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and crack in the eggs and olive oil. Using a fork, beat the eggs gently while gradually incorporating the flour until a rough dough forms.

Knead the Dough
Transfer the dough to a lightly floured surface and knead for about 5-7 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.

Prepare the Filling
In a mixing bowl, combine ricotta cheese, cooked lobster meat, chopped shrimp, chopped scallops, grated Parmesan cheese, salt, and black pepper. Mix well until all ingredients are evenly incorporated.
Ravioli Assembly

Roll Out the Dough
After the dough has rested, divide it into four equal portions. Roll out one portion at a time on a floured surface or using a pasta machine until very thin.

Shape the Ravioli
Place small mounds of the filling (about 1 tablespoon) on one half of the dough sheet, spacing them about 2 inches apart. Fold the other half of the dough over the filling. Press down around each mound to seal, ensuring there are no air pockets. Cut out individual ravioli shapes using a knife or ravioli cutter.

Repeat the rolling and filling process with the remaining dough and filling.
Cooking the Ravioli

Boil the Ravioli
Bring a large pot of salted water to a boil. Carefully drop the ravioli into the boiling water and cook for about 4-5 minutes or until they float to the surface. Remove with a slotted spoon and set aside.

On each plate, add a base of marinara sauce, followed by the cooked ravioli. Drizzle with Alfredo sauce and garnish with fresh basil and grated Parmesan cheese before serving.
