Preparing the Lamb Osso Bucco

    Searing the Lamb

    In a large dutch oven or heavy pot, heat the olive oil over medium-high heat. Season the lamb shanks with salt and black pepper, then sear them in the hot oil until browned on all sides, about 5 minutes. Remove the lamb from the pot and set aside.

    Sautéing the Vegetables

    In the same pot, add the chopped onion, carrots, and celery. Sauté for about 5 minutes until softened. Add minced garlic and cook for another minute.

    Deglazing the Pot

    Pour in the red wine, scraping up any browned bits from the bottom of the pot. Let it simmer for 2-3 minutes until slightly reduced.

    Simmering the Osso Bucco

    Add the lamb back into the pot, along with beef broth, tomato paste, thyme, and bay leaves. Bring to a boil, then reduce heat to low, cover, and simmer for about 1.5 to 2 hours, until the meat is tender.

Preparing the Mashed Potatoes

    Boiling the Potatoes

    While the lamb is cooking, peel and chop the potatoes into even-sized chunks. Place them in a pot of salted water and bring to a boil. Cook for about 15-20 minutes or until fork-tender.

    Mashing the Potatoes

    Drain the potatoes and return them to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy.

    Cooking the Vegetables

    In a large skillet, heat olive oil over medium heat. Add the green beans, bell peppers, and zucchini. Sauté for about 5-7 minutes until tender. Season with salt and black pepper.
