Prepare the Pork Chops
Remove the double bone-in pork chops from the refrigerator and let them come to room temperature for about 15 minutes. This allows for even cooking.

Season the Chops
In a small bowl, mix together the garlic powder, onion powder, smoked paprika, salt, and black pepper. Rub the olive oil over both sides of the pork chops, then sprinkle the seasoning mix evenly on both sides of the chops.

Add Fresh Herbs
Chop the fresh rosemary finely and sprinkle it over both sides of the pork chops. Drizzle the lemon juice on top, ensuring it is evenly distributed.

Preheat the Pan
Heat a large cast-iron skillet or frying pan over medium-high heat for about 3 minutes until hot.

Sear the Pork Chops
Add the seasoned pork chops to the hot skillet. Sear them for 4-5 minutes on one side without moving them, until a nice golden crust forms.

Flip and Cook
Flip the pork chops carefully using tongs. Cook for an additional 4-5 minutes on the other side until they reach an internal temperature of 145°F (63°C).
