Cook the Pasta
In a large pot, bring salted water to a boil. Add the gluten-free mostaccioli pasta and cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.

Sauté the Aromatics
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute until fragrant.

Cook the Ground Beef
Add the ground beef to the skillet, breaking it apart with a wooden spoon. Cook until browned and no longer pink, about 7-10 minutes. Drain excess fat if necessary.

Add Tomatoes and Seasonings
Stir in the crushed tomatoes, Italian seasoning, salt, and black pepper. Bring the mixture to a simmer and let it cook for 15-20 minutes, stirring occasionally.

Combine Pasta and Sauce
Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the cooked mostaccioli pasta with the meat sauce. Mix until the pasta is well coated.

Pour the pasta and sauce mixture into a greased 9x13 inch baking dish, spreading it evenly.

Sprinkle the grated Parmesan cheese over the top of the pasta. Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden brown.
