Method

Preparation

  1. 1

    Prepare the Ribeye

Take the 14 oz ribeye steak out of the refrigerator and let it sit at room temperature for about 30 minutes before cooking. This allows for more even cooking.

  2. 2

    Season the Steak

Pat the ribeye dry with paper towels to remove moisture. Generously season both sides with kosher salt, freshly ground black pepper, and garlic powder. Drizzle olive oil over the steak, rubbing it in to coat evenly.

Cooking

  1. 3

    Preheat the Pan

Heat a cast-iron skillet or heavy-bottomed pan over high heat for about 5 minutes until it is very hot.

  2. 4

    Sear the Steak

Once the pan is hot, carefully place the ribeye steak in the pan. Sear for about 4-5 minutes without moving it to develop a nice crust.

  3. 5

    Flip the Steak

After 4-5 minutes, use tongs to flip the steak over. If desired, add a sprig of fresh rosemary and a tablespoon of butter to the pan for additional flavor.

  4. 6

    Cook the Other Side

Cook the other side for another 4-5 minutes for medium-rare, adjusting the time based on your preferred doneness. Use a meat thermometer to check the internal temperature; it should read about 130°F (54°C) for medium-rare.

Finishing

  1. 7

    Rest the Steak

Remove the ribeye from the pan and transfer it to a cutting board. Allow it to rest for about 5-10 minutes to let the juices redistribute.

  2. 8

    Slice and Serve

After resting, slice the steak against the grain and serve immediately. Enjoy your perfectly cooked ribeye!
