Method

Preparation

  1. 1

    Prepare the Steak

Remove the New York strip steak from the refrigerator and let it sit at room temperature for at least 30 minutes before cooking. This helps the steak cook more evenly.

  2. 2

    Season the Steak

Pat the steak dry with paper towels. Sprinkle kosher salt, freshly ground black pepper, and garlic powder evenly on both sides of the steak. Rub the seasonings into the meat gently.

Cooking

  1. 3

    Heat the Pan

In a large skillet, preferably cast iron, heat 2 tablespoons of olive oil over medium-high heat until it shimmers and is almost smoking.

  2. 4

    Sear the Steak

Carefully place the seasoned New York strip steak in the hot skillet. Sear for about 4-5 minutes without moving it, allowing a crust to form.

  3. 5

    Flip and Cook

Using tongs, flip the steak over and cook for another 4-5 minutes for medium-rare, adjusting the time according to your desired doneness.

  4. 6

    Add Optional Garnish

If desired, add a sprig of fresh rosemary and 1 tablespoon of butter to the pan during the last minute of cooking for added flavor. Baste the steak with the melted butter using a spoon.

Resting and Serving

  1. 7

    Rest the Steak

Remove the steak from the skillet and place it on a cutting board. Tent it loosely with aluminum foil and let it rest for 5-10 minutes to allow the juices to redistribute.

  2. 8

    Slice and Serve

After resting, slice the steak against the grain and serve immediately. Enjoy your perfectly cooked New York strip steak!
