Method

Preparation of Beef Tongue

    Prepare the Beef Tongue

    Rinse the beef tongue under cold water to remove any impurities. Place it in a large pot and cover with water. Add 2 cloves of crushed garlic and half of the chopped onion. Bring to a boil, then reduce heat to low and simmer for about 2-3 hours, or until the tongue is tender.

    Peel the Tongue

    Once cooked, remove the tongue from the pot and let it cool slightly. Peel off the tough outer skin and discard it. Dice the tongue into small pieces (about 1/2 inch) and set aside.

    Sauté the Tongue

    In a skillet, heat a little oil over medium heat. Add the diced beef tongue, remaining chopped garlic, and onion. Cook for about 5-7 minutes, stirring occasionally until the onion is translucent and the tongue is heated through.

Assembling Tacos

    Prepare the Tortillas

    Warm the corn tortillas in a dry skillet or directly over an open flame until they are pliable.

    Assemble the Tacos

    Place a generous amount of the sautéed beef tongue mixture onto each tortilla. Top with fresh chopped cilantro and diced onion.

Serving

    Serve the tacos alongside a cup of black beans, a cup of Mexican rice, and dollops of sour cream and pico de gallo.
