Peel the Plantains
Carefully peel the ripe plantains. Cut off the ends and make a shallow vertical slit along the peel. Remove the peel and slice the plantains diagonally into 1-inch thick pieces.

In a large skillet, heat the vegetable oil over medium heat. Ensure that the oil is hot enough by testing it with a small piece of plantain; it should sizzle upon contact.

Fry the Plantains
Once the oil is hot, carefully add the sliced plantains to the skillet in a single layer. Fry them for about 2-3 minutes on each side, or until they are golden brown and crispy.

Arrange the fried plantains on a serving plate. Serve warm with a generous dollop of sour cream on the side.
