Method

Preparation

  1. 1

    Peel the Plantains

Carefully peel the ripe plantains. Cut off the ends and make a shallow vertical slit along the peel. Remove the peel and slice the plantains diagonally into 1-inch thick pieces.

  2. 2

    Heat the Oil

In a large skillet, heat the vegetable oil over medium heat. Ensure that the oil is hot enough by testing it with a small piece of plantain; it should sizzle upon contact.

Cooking

  1. 3

    Fry the Plantains

Once the oil is hot, carefully add the sliced plantains to the skillet in a single layer. Fry them for about 2-3 minutes on each side, or until they are golden brown and crispy.

  2. 4

    Drain Excess Oil

Using a slotted spoon, remove the fried plantains from the skillet and place them on a paper towel-lined plate to absorb any excess oil.

Serving

  1. 5

    Plate the Dish

Arrange the fried plantains on a serving plate. Serve warm with a generous dollop of sour cream on the side.

  2. 6

    Garnish (Optional)

If desired, sprinkle fresh cilantro over the top and serve with lime wedges for an added burst of flavor.
