Prepare the Vegetables
Slice the onion into thin rings. Dice the tomato and chop the lettuce into bite-sized pieces.

Season the Meat
In a bowl, toss the steak or chicken strips with salt, black pepper, cumin, and chili powder until evenly coated.
Cooking

Sauté the Onions
Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the sliced onions and sauté until they are soft and slightly caramelized, about 5-7 minutes. Remove from the skillet and set aside.

Cook the Meat
In the same skillet, add the remaining tablespoon of olive oil. Add the seasoned steak or chicken strips and cook until browned and cooked through, about 6-8 minutes.

Melt the Cheese
Reduce the heat to low and sprinkle the Monterey Jack cheese over the cooked meat. Cover the skillet to allow the cheese to melt for about 2-3 minutes.

Assemble the Sandwich
Slice the sub rolls or hoagie buns lengthwise. Place a layer of sautéed onions on the bottom, followed by the cheesy steak or chicken mixture. Top with diced tomatoes and chopped lettuce. Close the sandwich.

Serve the steak and cheese sandwiches warm with your choice of side, such as fries or a salad.
