Prepare the Filling

    Sauté the Spinach

    In a medium skillet over medium heat, add olive oil. Once hot, add the fresh spinach and sauté for about 2-3 minutes until wilted. Remove from heat and set aside.

Assemble the Quesadilla

    Layer the Ingredients

    On one half of each flour tortilla, layer the sautéed spinach, followed by Monterrey Jack cheese, and cheddar cheese. Fold the other half of the tortilla over to cover the filling.

Cook the Quesadilla

    Pan-Fry the Quesadilla

    In the same skillet used for the spinach, add a little more olive oil if necessary and heat over medium-high heat. Place the folded quesadilla in the skillet and cook for 2-3 minutes on each side, or until golden brown and the cheese is melted. Repeat with remaining tortillas.

    Cut the quesadillas into wedges and serve hot with pico de gallo, sour cream, and fresh fruit on the side.
