Dough Preparation

    Mix Dry Ingredients

    In a large mixing bowl, combine the all-purpose flour, baking powder, and salt. Whisk together until well blended.

    Incorporate Shortening

    Add the shortening to the flour mixture. Use your fingers or a pastry cutter to mix it in until the mixture resembles coarse crumbs.

    Add Water

    Slowly add the warm water to the mixture, stirring until a soft dough forms. You may need to adjust the amount of water slightly depending on the humidity.

    Knead

    Turn the dough onto a lightly floured surface and knead for about 2-3 minutes until smooth. Cover with a clean cloth and let rest for 30 minutes.

Frying and Serving

    Heat Oil

    In a deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

    Roll Out Dough

    Divide the rested dough into small pieces (about the size of a golf ball). Roll each piece out on a lightly floured surface to about 1/4 inch thick.

    Fry Sopapillas

    Carefully place the rolled dough into the hot oil, frying a few at a time. Cook for about 1-2 minutes on each side, or until golden brown and puffed up.

    Drain and Cool

    Use a slotted spoon to remove the sopapillas from the oil and place them on paper towels to drain excess oil.

    Add Toppings

    While still warm, drizzle the sopapillas with honey, then sprinkle with powdered sugar and ground cinnamon to taste. Serve immediately.
