Method

Preparation

  1. 1

    Prepare the Ingredients

Shred the Chihuahua and Monterey Jack cheeses, and soften the cream cheese by letting it sit at room temperature. Dice the jalapeño and mince the garlic.

Cooking the Chorizo

  1. 2

    Cook the Chorizo

In a skillet over medium heat, add the olive oil. Once hot, add the chorizo and cook, breaking it up with a spatula, until browned and cooked through, about 5-7 minutes. Drain excess fat if necessary.

  2. 3

    Add Garlic and Jalapeño

Add the minced garlic and diced jalapeño to the skillet with the chorizo. Cook for an additional 2-3 minutes until fragrant.

Combining and Melting

  1. 4

    Combine Cheese and Chorizo

Reduce the heat to low and add the shredded Chihuahua cheese, Monterey Jack cheese, and softened cream cheese to the skillet. Stir continuously until the cheeses melt and the mixture is smooth and creamy.

Serving

  1. 5

    Serve the Queso Fundido

Transfer the queso fundido to a serving dish and serve immediately with warm flour tortillas for dipping.
