Infused Tequila Preparation

    Prepare the Ingredients

    Cut the fresh pineapple into small chunks and slice the jalapeno pepper in half lengthwise.

    Infuse the Tequila

    In a clean glass jar, combine the tequila, pineapple chunks, and jalapeno halves. Seal the jar tightly and let it sit in a cool, dark place for 24-48 hours to infuse.

    Strain the Infused Tequila

    After the infusion period, strain the tequila through a fine mesh sieve into a clean bottle, discarding the solids.

Margarita Preparation

    Prepare the Glasses

    If desired, rim the glasses with salt by rubbing a lime wedge around the rim and then dipping it into a plate of salt.

    Mix the Margarita

    In a cocktail shaker, combine 2 oz of the infused tequila, 1 oz of lime juice, and 1/2 oz of simple syrup. Add ice to fill the shaker.

    Shake and Strain

    Shake vigorously for about 15 seconds until well chilled. Strain the mixture into the prepared glasses filled with ice.
