Preparation of Shrimp

Season the Shrimp
In a bowl, combine the peeled and deveined jumbo shrimp with salt and black pepper. Toss well to coat evenly and set aside.
Making the Garlic Butter Sauce

Heat the Oil and Butter
In a large skillet, heat the olive oil and unsalted butter over medium heat until melted and hot.

Incorporate the Shrimp
Add the seasoned shrimp to the skillet and cook for about 2-3 minutes, stirring occasionally, until the shrimp turn pink and opaque.

Add Sherry and Spices
Pour in the dry sherry wine and sprinkle in the red pepper flakes, stirring to combine. Let it simmer for an additional 2 minutes.

Finish with Parsley
Remove the skillet from heat and stir in the chopped fresh parsley.

Transfer the gambas al ajillo to a serving dish and serve immediately with slices of crusty bread for dipping into the sauce.
