Prepare the Tortillas
In another skillet, lightly warm the corn tortillas on both sides for about 30 seconds until they are pliable.

Assemble the Enchilada
Place a portion of cooked ground beef on each tortilla, sprinkle shredded cheese on top, and roll the tortillas tightly. Place the rolled tortillas seam-side down in a baking dish.

Add Sauce and Cheese
Pour enchilada sauce evenly over the rolled tortillas and sprinkle any remaining cheese on top.

Preheat your oven to 350°F (175°C). Bake the enchiladas for about 20 minutes or until the cheese is melted and bubbly.

Cook the Mexican rice according to package instructions. Typically, this involves boiling water and adding rice, then simmering until cooked through.

In a saucepan, heat the black beans over medium heat until warmed through, about 5-7 minutes.

In a bowl, combine diced tomatoes, onions, cilantro, lime juice, and salt to taste. Mix well to create a fresh pico de gallo.
