Mix the Flour
Once boiling, remove from heat and stir in the flour until the mixture forms a smooth ball of dough. Let it cool for about 10 minutes.

Add Eggs
Add the eggs one at a time, mixing well after each addition until the dough is smooth and glossy.

Preheat the Oil
In a large heavy pot, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

Pipe the Churros
Transfer the dough to a piping bag fitted with a large star tip. Pipe strips of dough (about 6 inches long) into the hot oil, cutting with scissors.

Fry the Churros
Fry the churros until golden brown on all sides, about 2-4 minutes. Remove with a slotted spoon and drain on paper towels.

Coat with Cinnamon Sugar
In a shallow dish, mix together sugar and ground cinnamon. Roll the hot churros in the mixture to coat.

Heat the Cream
In a small saucepan, heat the heavy cream over medium heat until it begins to simmer.

Remove from heat and add the chopped dark chocolate, stirring until melted and smooth.

Stir in the sugar and vanilla extract until fully combined and the sauce is glossy.
