Cake Layers

    Preheat the Oven

    Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    Mix Dry Ingredients

    In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

    Combine Wet Ingredients

    In another bowl, whisk together the eggs, milk, oil, and vanilla extract until well combined.

    Combine Mixtures

    Gradually add the wet ingredients to the dry ingredients, mixing until just combined.

    Add Boiling Water

    Carefully stir in the boiling water (the batter will be thin).

    Bake the Cakes

    Divide the batter evenly between the prepared pans. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.

    Cool the Layers

    Remove the cakes from the oven and allow them to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

Chocolate Mousse Filling

    Melt Chocolate

    Chop the dark chocolate and melt it in a heatproof bowl over simmering water or in the microwave. Let it cool slightly.

    Whip Cream

    In a large bowl, whip the heavy cream and powdered sugar until stiff peaks form. Add vanilla extract and mix gently.

    Beat Egg Whites

    In a separate bowl, beat the egg whites until soft peaks form. Gradually add granulated sugar and continue beating until stiff peaks form.

    Combine Mixtures

    Fold the melted chocolate into the whipped cream, then gently fold in the beaten egg whites until fully combined.

Chocolate Ganache Topping

    Prepare Ganache

    Chop the dark chocolate and place it in a bowl. Heat the heavy cream until just boiling and pour it over the chocolate. Let it sit for a few minutes, then stir until smooth.

Assembling the Cake

    Layer the Cake

    Place one cake layer on a serving plate. Spread half of the chocolate mousse filling over the top.

    Add Second Layer

    Place the second cake layer on top of the mousse. Spread the remaining mousse on top.

    Drizzle Ganache

    Pour the chocolate ganache over the top of the cake, allowing it to drip down the sides.

    Chill and Serve

    Refrigerate the cake for at least 1 hour before serving. Slice and enjoy your chocolate layered cake!
