Method

Crust Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C).

  2. 2

    Combine Crust Ingredients

In a medium bowl, mix together the graham cracker crumbs, granulated sugar, and melted butter until well combined.

  3. 3

    Form the Crust

Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer.

  4. 4

    Bake the Crust

Bake the crust in the preheated oven for 10 minutes, then remove and allow it to cool while you prepare the filling.

Filling Preparation

  1. 5

    Beat Cream Cheese

In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

  2. 6

    Add Sugar and Sour Cream

Gradually add the granulated sugar and sour cream, mixing until well combined.

  3. 7

    Incorporate Vanilla and Eggs

Add the vanilla extract and mix. Then add the eggs one at a time, mixing on low speed after each addition until just combined.

  4. 8

    Add Flour

Sift in the all-purpose flour and mix until just combined. Avoid overmixing.

  5. 9

    Pour Filling into Crust

Pour the cheesecake filling over the cooled crust in the springform pan.

  6. 10

    Bake the Cheesecake

Bake in the preheated oven for 50-60 minutes, or until the center is set and slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.

  7. 11

    Chill the Cheesecake

After cooling in the oven, refrigerate the cheesecake for at least 4 hours, or overnight for best results.

Topping Preparation

  1. 12

    Prepare Topping

If using, combine fresh berries and powdered sugar in a bowl and let them sit for about 10 minutes to release their juices.

  2. 13

    Serve

Slice the chilled cheesecake, top with the berry mixture (if desired), and serve.
