Cooking Pasta

Boil the Pasta
In a large pot, bring water to a boil. Add a pinch of salt to the boiling water.

Cook the Spaghetti
Add 400 grams of spaghetti to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

Reserve Pasta Water
Before draining, reserve about 1 cup of pasta cooking water. Then, drain the spaghetti and set aside.
Preparing Sauce

Cook Pancetta
In a large skillet over medium heat, add 150 grams of pancetta and cook until crispy, about 5-7 minutes. Remove from heat.

Mix Eggs and Cheese
In a mixing bowl, whisk together 4 large eggs, 100 grams of grated Parmesan cheese, and 1 teaspoon of black pepper until well combined.
Combining Ingredients

Combine Pasta and Pancetta
Add the drained spaghetti to the skillet with the pancetta and toss to combine.

Serve the pasta in bowls, garnished with fresh parsley and additional Parmesan cheese if desired.
