Method

Panna Cotta Base Preparation

    Bloom the Gelatin

    In a small bowl, combine the unflavored gelatin with 3 tablespoons of water. Let it sit for about 5 minutes to bloom.

    Heat the Cream Mixture

    In a saucepan, combine the heavy cream, whole milk, and granulated sugar. Heat over medium heat until the mixture is warm but not boiling, stirring occasionally.

    Add Gelatin

    Once the cream mixture is warm, remove it from heat and stir in the bloomed gelatin until completely dissolved.

    Add Vanilla

    Stir in the vanilla extract and mix well.

    Pour into Molds

    Pour the panna cotta mixture into individual serving molds or cups. Cover with plastic wrap and refrigerate for at least 4 hours, or until set.

Berry Sauce Preparation

    Prepare the Berries

    In a medium saucepan, combine the mixed berries, granulated sugar, and lemon juice. Stir gently to combine.

    Cook the Sauce

    Cook over medium heat for about 5-7 minutes, stirring occasionally, until the berries have softened and released their juices. Remove from heat and let cool.

    Blend (Optional)

    For a smoother sauce, you can blend the berry mixture until smooth and strain it through a fine mesh sieve to remove seeds.

    Chill the Sauce

    Refrigerate the berry sauce until ready to serve.
