Calamari Preparation

Prepare the Squid
In a mixing bowl, combine the flour, cornstarch, salt, black pepper, and garlic powder. Mix well. In another bowl, whisk together the eggs and milk.

Coat the Squid
Dip each squid ring into the egg mixture, letting any excess drip off, then coat it in the flour mixture. Ensure each piece is evenly coated.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Carefully add the coated squid rings to the hot oil in batches to avoid overcrowding. Fry for about 2-3 minutes, or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Add Tomatoes and Seasonings
Pour in the crushed tomatoes, and add the dried oregano, dried basil, salt, and black pepper. Stir well to combine.

Simmer the Sauce
Reduce the heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally, until it thickens slightly.
