Gelato Base Preparation

    Heat Milk and Cream

    In a saucepan, combine 2 cups of whole milk and 1 cup of heavy cream. Heat over medium heat until the mixture begins to steam, but do not let it boil.

    Whisk Egg Yolks and Sugar

    In a separate bowl, whisk together 3 large egg yolks and 3 tablespoons of granulated sugar until the mixture is pale and creamy.

    Temper Egg Mixture

    Slowly pour about one cup of the hot milk mixture into the egg yolk mixture while whisking continuously to temper the eggs. This will prevent them from scrambling.

    Combine and Cook

    Return the tempered egg mixture to the saucepan with the remaining milk and cream. Cook over medium heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon (about 5-7 minutes).

    Add Vanilla

    Remove the saucepan from heat and stir in 1 teaspoon of vanilla extract. Allow the mixture to cool at room temperature.

Flavoring the Gelato

    Choose Your Flavor

    You can add flavorings at this stage. For chocolate gelato, whisk in 1 tablespoon of cocoa powder. For fruit gelato, blend 1 cup of fresh fruit to a puree and mix it into the base. For chocolate chip gelato, fold in 1 cup of chocolate chips.

    Chill the Mixture

    Cover the gelato mixture with plastic wrap and refrigerate for at least 4 hours or overnight, until it is completely chilled.

Churning and Freezing

    Churn the Gelato

    Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.

    Freeze the Gelato

    Transfer the gelato to an airtight container and freeze for at least 4 hours or until firm.
