    Prepare the potatoes

    Wash and peel the russet potatoes. Cut them into even-sized sticks, about 1/4 inch thick.

    Soak the potatoes

    Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

    Heat the oil

    In a deep pot or fryer, heat the vegetable oil to 350°F (175°C).

    Fry the potatoes

    Drain and pat the soaked potatoes dry with paper towels. Fry them in batches for about 5-7 minutes or until golden brown and crispy. Remove and drain on paper towels.

    Season the fries

    While still hot, season with salt to taste.

For the garlic Greek yogurt

    Mix the ingredients

    In a bowl, combine the Greek yogurt, minced garlic, lemon juice, salt, and fresh dill. Mix until well combined.

    Chill

    Refrigerate the garlic Greek yogurt for at least 30 minutes before serving to allow the flavors to meld.
