Fried Sweet Plantains

    Prepare the Plantains

    Peel the ripe plantains and cut them diagonally into 1-inch thick slices.

    Heat the Oil

    In a large skillet, heat the vegetable oil over medium heat until it shimmers.

    Fry the Plantains

    Add the sliced plantains to the hot oil in batches, ensuring not to overcrowd the pan. Fry them for about 3-4 minutes on each side until they are golden brown.

    Drain and Set Aside

    Once fried, remove the plantains from the skillet and drain them on paper towels to absorb excess oil. Set aside.

Spicy Shrimp

    Prepare the Shrimp

    In a bowl, toss the shrimp with olive oil, minced garlic, red chili flakes, lime juice, and salt. Let marinate for about 10 minutes.

    Cook the Shrimp

    In a separate skillet, heat a little olive oil over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes on each side until they turn pink and opaque.

    Once cooked, remove the skillet from the heat and set the shrimp aside.

Mambo Sauce

    In a small bowl, mix together the ketchup, hot sauce, garlic powder, brown sugar, and vinegar until well combined.

    Taste the sauce and adjust with more hot sauce or sugar if desired.

Assembly

    On a serving plate, arrange the fried sweet plantains. Top generously with the spicy shrimp.
