Prepare the Chicken
Season the chicken thighs with salt and black pepper. Coat them lightly with cornstarch to create a crisp texture.

Cook the Rice
In a medium saucepan, combine the white rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the rice is tender and the water is absorbed.

Make the Sauce
In a small bowl, whisk together soy sauce, honey, sesame oil, sriracha sauce, and rice vinegar. Set aside.

Stir-Fry the Chicken
Heat a large skillet or wok over medium-high heat. Add a tablespoon of oil, then add the chicken. Stir-fry for about 5-7 minutes until golden and cooked through.

Combine with Sauce
Pour the prepared sauce over the chicken and vegetables. Stir well to coat everything and cook for another 2-3 minutes until the sauce thickens slightly.

Serve the sweet and spicy sesame chicken over a bed of cooked white rice. Sprinkle with sesame seeds for garnish.
