Prepare Sushi Rice

Rinse the Rice
Place the sushi rice in a fine mesh strainer and rinse it under cold water until the water runs clear.

Cook the Rice
In a medium saucepan, combine the rinsed sushi rice and water. Cover and bring to a boil over medium-high heat. Once boiling, reduce heat to low and simmer for 20 minutes. Remove from heat and let it sit covered for an additional 10 minutes.

Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice using a wooden spatula. Allow the rice to cool to room temperature.
Prepare Spicy Tuna Filling

Chop Tuna
Dice the fresh sushi-grade tuna into small cubes.

Mix Ingredients
In a bowl, combine the diced tuna, mayonnaise, Sriracha sauce, chopped green onion, and sesame oil. Mix well until evenly combined.

In a small bowl, combine mayonnaise and Sriracha sauce. Stir until smooth and set aside.
Assemble the Sushi Rolls

Lay Nori on Bamboo Mat
Place a sheet of nori on a bamboo sushi mat, shiny side down.

Spread Sushi Rice
Wet your hands to prevent sticking. Take about 1/4 of the sushi rice and spread it evenly over the nori, leaving about an inch at the top empty.

Add Spicy Tuna Filling
Place about 1/4 of the spicy tuna filling in a line across the center of the rice.

Roll the Sushi
Using the bamboo mat, carefully roll the sushi away from you, pressing gently but firmly to keep the roll tight. Use a bit of water to seal the edge of the nori.

Cut and Serve
Using a sharp knife, slice the roll into 6-8 pieces. Drizzle spicy mayo on top, and sprinkle with sesame seeds. Serve with soy sauce on the side.
