Method

Prepare Sushi Rice

    Rinse Rice

    Place sushi rice in a fine-mesh sieve and rinse under cold water until the water runs clear. This removes excess starch.

    Cook Rice

    In a medium saucepan, combine rinsed sushi rice and water. Bring to a boil over medium heat, then reduce heat to low, cover, and simmer for 20 minutes.

    Season Rice

    Once cooked, remove from heat and let sit, covered, for 10 minutes. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Stir this mixture into the rice gently, and let cool to room temperature.

Prepare Spicy Tuna Filling

    Chop Tuna

    Dice sushi-grade tuna into small cubes and place it in a mixing bowl.

    Mix Ingredients

    To the bowl of tuna, add mayonnaise, sriracha sauce, chopped green onions, and sesame oil. Mix until well combined.

Prepare Spicy Mayo Topping

    Combine Mayo and Sriracha

    In a small bowl, mix together mayonnaise and sriracha sauce until well combined. Set aside.

Assemble Sushi Rolls

    Lay Out Nori

    On a bamboo sushi mat, lay out a sheet of nori, shiny side down.

    Add Sushi Rice

    Wet your hands to prevent sticking, then take a handful of sushi rice and spread it evenly over the nori, leaving about 1 inch at the top edge.

    Add Tuna Filling

    Place a line of the spicy tuna filling across the center of the rice-covered nori.

    Roll Sushi

    Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to keep it tight. Seal the edge with a little water.

    Slice Rolls

    Using a sharp knife, slice the roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts for clean slices.

Serve

    Plate the Rolls

    Arrange the sliced sushi rolls on a serving plate. Drizzle with spicy mayo and sprinkle sesame seeds on top.

    Add Garnishes

    Serve with pickled ginger and wasabi on the side.
