Prepare Sushi Rice

    Rinse the Sushi Rice

    In a fine mesh sieve, rinse the sushi rice under cold water until the water runs clear. This removes excess starch.

    Cook the Sushi Rice

    In a medium saucepan, combine the rinsed sushi rice and 1.5 cups of water. Bring to a boil over medium heat. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the rice is tender and the water is absorbed.

    Season the Rice

    Once cooked, remove the rice from heat and let it sit covered for 10 minutes. In a small bowl, mix together the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice with a wooden spatula. Allow to cool to room temperature.

Prepare Fillings

    Prepare the Avocado

    Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it lightly with a fork and set aside.

    Fry the Yuca

    If using fresh yuca, peel and cut it into sticks or cubes. Boil in salted water for about 15 minutes until tender, then drain and fry in hot oil until golden brown. If using pre-fried yuca, simply heat it according to package instructions.

    Slice the Cucumber and Maduro

    Peel the cucumber if desired and slice it thinly. For the maduro, peel and slice into long strips or rounds.

    Prepare Sweet Asian Vegetables

    Wash and chop the sweet Asian vegetables into thin strips or bite-sized pieces.

Assemble the Rolls

    Lay Out Nori Sheets

    Place a sheet of nori on a bamboo sushi mat, shiny side down.

    Spread the Rice

    Wet your hands to prevent sticking and take about 1/2 cup of sushi rice. Spread it evenly over the nori, leaving a 1-inch border at the top.

    Add Fillings

    Layer the mashed avocado, fried yuca, cucumber slices, maduro strips, and sweet Asian vegetables across the rice.

    Roll the Sushi

    Starting from the bottom, carefully roll the sushi away from you, using the mat to help. Roll tightly but not too tight to avoid squeezing out the fillings. Wet the top edge of the nori with a little water to seal the roll.

    Slice the Rolls

    Using a sharp knife, slice the roll into bite-sized pieces, cleaning the knife with a damp cloth between cuts to prevent sticking.

Serve

    Plate the Rolls

    Arrange the sliced rolls on a serving plate.

    Add Condiments

    Serve with soy sauce for dipping and a small amount of wasabi on the side if desired.
