Preparation of Ingredients

    Prepare the Sushi Rice

    Rinse 1 cup of sushi rice under cold water until the water runs clear. Cook the rice according to package instructions. Once cooked, mix with 2 tablespoons of rice vinegar, 1 teaspoon of sugar, and 1 teaspoon of salt. Allow the rice to cool.

    Prepare the Fried Yuca

    Peel the yuca and cut it into sticks. Boil in salted water for about 20 minutes until tender. Drain and fry in hot oil until golden brown. Set aside.

    Prepare the Maduro

    Peel the ripe plantain and slice it lengthwise. Fry in a pan with a little oil until golden and caramelized. Set aside.

    Slice the Vegetables

    Thinly slice the avocado and cucumber. Chop the sweet Asian vegetable into thin strips.

Rolling the Sushi

    Assemble the Roll

    Place a bamboo sushi mat on a flat surface and lay a sheet of nori on top, shiny side down. Wet your hands to prevent sticking, then take a handful of sushi rice and spread it evenly over the nori, leaving about 1 inch at the top edge.

    Add the Fillings

    In the center of the rice, place a line of fried yuca, slices of avocado, cucumber, maduro, and sweet Asian vegetable.

    Roll the Sushi

    Using the bamboo mat, carefully roll the sushi away from you, tucking the filling as you go. Roll tightly until you reach the edge of the nori. Seal the edge with a little water.

    Cut the Roll

    Using a sharp knife, slice the roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts for clean slices.
