Prepare Sushi Rice

Rinse the Rice
Rinse the sushi rice under cold water until the water runs clear. This removes excess starch for a better texture.

Cook the Rice
Cook the rice in a rice cooker or on the stovetop according to package instructions. Typically, use a 1:1.2 ratio of rice to water.

Season the Rice
Once cooked, let the rice cool slightly. Mix rice vinegar, sugar, and salt in a small bowl until dissolved, then fold into the rice gently.

Prepare Sushi Mat
Place a bamboo sushi mat on a flat surface and cover it with plastic wrap.

With wet hands, spread a thin layer of sushi rice evenly over the nori (seaweed) on the sushi mat.

Roll Sushi
Using the mat, carefully roll the sushi away from you, pressing gently but firmly to shape the roll.

Once rolled, use a sharp knife to slice the roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts for clean slices.
