Preparation

    Prepare the Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions. Once cooked, transfer to a bowl and gently mix with rice vinegar. Allow to cool to room temperature.

    Prepare the Vegetables

    Slice the cucumber into thin strips and the jalapeño into thin rounds. If desired, remove the seeds from the jalapeño for less heat.

    Prepare the Spicy Tuna

    If using raw tuna, chop it into small pieces and mix with spicy mayo (mayonnaise mixed with sriracha) to create the spicy tuna mix.

    Prepare the Guacamole

    If using store-bought, ensure it's ready. If making fresh, mash ripe avocados with lime juice, salt, and pepper to taste.

Rolling the Sushi

    Lay the Nori

    Place a sheet of nori on a bamboo sushi mat, shiny side down.

    Spread the Rice

    Wet your hands to prevent sticking, then grab a handful of sushi rice and spread it evenly over the nori, leaving about an inch at the top edge.

    Add Fillings

    In the center of the rice, layer crab meat, cucumber strips, spicy tuna mix, slices of smoked salmon, guacamole, and jalapeño.

    Roll the Sushi

    Using the bamboo mat, carefully lift the edge of the mat closest to you and begin rolling away from you. Press gently but firmly to shape the roll. Continue rolling until the entire roll is formed.

    Slice the Roll

    Using a sharp knife, slice the roll into 6-8 pieces. Wet the knife between cuts to prevent sticking.
