Mofongo Preparation

Fry the Plantains
Peel the green plantains and cut them into 1-inch thick slices. In a large skillet, heat olive oil over medium heat. Once hot, add the plantain slices and fry until they are golden brown, about 4-5 minutes per side. Remove and drain on paper towels.

Mash the Plantains
In a mortar and pestle (or a bowl), combine the fried plantains, minced garlic, and salt. Gradually add chicken broth to help mash the plantains until you achieve a chunky consistency. Form into a mound and set aside.
Shrimp Topping Preparation

Cook the Shrimp
In a large skillet, melt butter over medium heat. Add minced garlic and sauté for about 1 minute. Add the shrimp and season with paprika, salt, and black pepper. Cook until the shrimp turns pink, about 3-4 minutes. Stir in lemon juice and remove from heat.
Mambo Sauce Preparation

Mix the Mambo Sauce
In a mixing bowl, combine mayonnaise, ketchup, hot sauce, garlic powder, onion powder, and salt. Mix until well combined. Adjust seasoning to taste.
Assembly

Assemble the Mofongo
On a serving plate, place the mound of mofongo in the center. Top generously with the cooked shrimp mixture. Drizzle the creamy mambo sauce over the top. Serve warm and enjoy!
