    Peel and Chop the Potatoes

    Peel the russet potatoes and cut them into uniform chunks (about 2 inches) to ensure even cooking.

    If using garlic, peel the cloves and leave them whole to infuse flavor into the potatoes.

Cooking

    Boil the Potatoes

    Place the chopped potatoes (and garlic if using) into a large pot. Cover with cold water and add 1 teaspoon of salt. Bring to a boil over high heat, then reduce heat to medium and simmer until the potatoes are tender, about 15-20 minutes.

    Once the potatoes are tender, carefully drain them in a colander. If you used garlic, discard the cloves.

Mashing

    Return the drained potatoes to the pot. Add the unsalted butter, and using a potato masher, begin to mash the potatoes until they reach your desired consistency.

    Gradually add the whole milk while continuing to mash until the potatoes are creamy. Season with the remaining salt and black pepper. Taste and adjust seasoning as needed.

    If using cream cheese, add it at this stage and mix until fully incorporated. Stir in chopped chives for added freshness.
